Sciroppo di mandorle


Ingredienti:
300 gr di mandorle spellate (se si vuole tostate)
1 kg di zucchero
1 bustina di vanillina
700 gr di acqua
La buccia di un limone (solo la parte gialla)

Procedimento:
Versare nel boccale le mandorle, la buccia di limone e 200 gr di zucchero, polverizzare da vel.5 a vel. Turbo per circa 1 min. e 30 sec. (portare gradualmente spatolando). Aggiungere 200 gr di acqua e omogeneizzare per 3 min. vel. Turbo. Unire la rimanente parte di acqua, zucchero e vanillina. Cuocere temp. 100° vel. 2 per 25 min. Filtrare il tutto con un colino a maglie medie. Diluendo in 1 litro di acqua 350 gr. di sciroppo di mandorle si ottiene il latte di mandorle. Oppure si può tenere lo sciroppo in frigo e usare all'occorrenza versando direttamente nel bicchiere da bibita circa un dito di sciroppo e aggiungere acqua molto fresca.

Nota: per chi non possiede il bimby può usare il robot da cucina per frullare e mescolare e poi cuocere in pentola.
